1. Degumming: The insoluble impurities of oil not only affect the stability of oil, but also affect the process effect of oil refining and deep processing. In the process of alkali refining, grease will promote emulsification, increase operation difficulties, increase consumption and auxiliary agent consumption, and reduce the quality of soap feet; In the process of decolorization, the absorbent consumption is increased and the decolorization effect is reduced.

The method used in actual production is hydration degumming. The basic principle of fat hydration degumming is to use the hydrophilicity of phosphine phospholipid and other gelatinsoluble oil impurities. First, a certain amount of electrolyte solution is added to the oil of the oil press to make the phosphine colloidal impurities absorb water, condense and separate from the oil. Among them, phosphatide phosphine glue is the main gum. In the case of very little moisture content, the phosphatide phosphine in the crude oil internal salt structure dissolved and dispersed in the crude oil molecules, when the water in the crude oil increases, it absorbs water, the volume increases, colloidal particles attract each other, the formation of a larger micelle, due to the difference in specific gravity, can be separated from the oil.

2. Deacidification: There is always a certain amount of free fatty acids in plant oils, and the amount depends on the quality of the oil. The immaturity of oil seeds and the high breakage of oil seeds are the main reasons for the high acid value of oil, especially when the water content is high, it is more unfavorable to the preservation of oil, which will cause the free acid content to soar, and reduce the quality of oil and oil storage period, so that the edible quality of oil and oil deteriorates quickly.

The common method of deacidification is alkali refining. Caustic soda can neutralize most of the free fatty acids in crude oil, and the sodium salt generated is not easily dissolved in oil, becoming flocculent and settling. The resulting sodium salts act as surfactants and can introduce considerable amounts of other impurities into the sediment, such as proteins, mucous, pigments, phospholipids, and substances with hydroxyl and phenolic groups. Even suspended solid impurities can be carried down by flocculent soap. Therefore, alkali refining has the comprehensive effect of deacidification, degumming, removing solid impurities and depigmentation.

3. Decolorization: The pigment composition in vegetable oil is complex, mainly including chlorophyll, carotene, flavonoid pigment, anthocyanidin and some sugars, protein decomposition products. Oil decolorization is commonly used by adsorption decolorization. The principle of adsorption decolorization method is to use the characteristics of the adsorbent with strong adsorption power to adsorb pigments and other impurities in hot oil, and remove the adsorbent and adsorbent pigments and impurities at the same time, so as to achieve the purpose of decolorization and purification.

All kinds of vegetable oil have its own unique flavor and taste, after acid removal, decolorization of the oil will also have trace aldehydes, ketones, hydrocarbons, low molecular fat, glycerol oxide and white soil, residual solvent odor, remove these bad odor process called deodorization.
