The crude oil contains impurities such as phospholipid, protein, mucoid and glycoglyceryl diester, so it is called colloidal impurities because it forms a sol system with the oil. The presence of these colloidal impurities not only reduces the use value and storage stability of the oil, but also has a series of adverse effects in the refining and processing process of the oil, resulting in a decline in the quality of the finished oil.

 

For example, gum causes excessive emulsification during alkali refining, so that oil and soap can not be separated well, that is, saponin contains more neutral oil, resulting in increased refining consumption, and increases the soap content in the oil, increasing the number of washing and oil loss caused by washing; During decolorization, the gel will cover part of the active surface of the decolorizer, which will reduce the decolorization efficiency. During deodorization, the temperature is higher, the gum will change, increase the color of the oil, and reduce the hydrogenation rate when hydrogenated. Therefore, the oil refining process is generally degummed first.

 

The process of removing gel-soluble impurities from wool oil is called degumming. Because the gelatinolytic impurities in the crude oil are mainly phospholipids, degumming is often called dephosphorization in industrial production. The main degumming methods are hydration degumming, adsorption degumming and acid degumming. For crude oil with high phospholipid content or which wishes to be extracted as a by-product of phospholipid, it is usually hydrated degumming before deacidification. In order to achieve higher degumming requirements, it may be necessary to degumming with acid, mainly with weak acids such as phosphoric acid and citric acid, and sulfuric acid is rarely used for degumming of edible oil. Generally, the fat obtained by acid degumming is dark in color, and some phospholipids are bad, and can not be used as raw materials for preparing edible phospholipids.
